Method

2. Poach the eggs – Crack each egg into a small cup. Swirl the water gently with a spoon and slide in the eggs one at a time. Let them cook for 3–4 minutes depending on how runny you like the yolk. Remove with a slotted spoon and drain.

3. Toast the bread – If your campervan has a toaster, use it. Otherwise, toast the bread in a dry frying pan over medium heat until golden.

4. Assemble & serve – Place the toasted bread on plates, layer with smoked salmon, and top with the poached eggs. Add avocado slices or a handful of rocket/spinach for extra freshness.
